Buttermilk Biscuits With Roasted Stone Fruit Compote

Ingredients:
FOR THE BISCUITS
1⅓ cups all-purpose flour
2 teaspoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
4 tablespoons (½ stick) very cold unsalted butter
½ cup plus
1 tablespoon low-fat buttermilk
FOR THE FRUIT COMPOTE
2 peaches, peeled and diced
2 plums, peeled and diced
¼ cup water
2 teaspoons honey
⅛ teaspoon ground ginger (optional)
Directions:
To prep the biscuits: In a small bowl, combine the flour, sugar, baking powder, baking soda, and salt. Using the large holes on a box grater, grate in the butter. Stir in the buttermilk to form a thick dough.
Place the dough on a lightly floured surface and gently pat it into a ½-inch-thick disc. Fold the dough in half, then rotate the whole thing 90 degrees, pat into a ½-inch thick disc and fold again.
Repeat until you have folded the dough four times. Pat the dough out a final time into a ½-inch-thick disc and use a 3-inch biscuit cutter to cut 4 biscuits from the dough (discard the scraps).
To prep the fruit compote:
In a large bowl, stir together the peaches, plums, water, honey, and ginger (if using).
To cook the biscuits and compote:
Install a crisper plate in the Zone 1 basket, place the biscuits in the basket, and insert the basket in the unit.
Place the fruit in the Zone 2 basket and insert the basket in the unit. Select Zone 1, select AIR FRY, set the temperature to 400°F, and set the time to 10 minutes. Select Zone 2, select ROAST, set the temperature to 350°F, and set the time to 20 minutes. Select SMART FINISH. Press START/PAUSE to begin cooking.
When the Zone 2 timer reads 10 minutes, press START/PAUSE. Remove the basket and stir the compote. Reinsert the basket and press START/PAUSE to resume cooking. When cooking is complete, the biscuits will be golden brown and crisp on top and the fruit will be soft.
Transfer the biscuits to a plate to cool. Lightly mash the fruit to form a thick, jammy sauce. Split the biscuits in half horizontally and serve topped with fruit compote.
