Cooking Time: 25 Minutes
Ingredients:
FOR THE COFFEE CAKE
6 tablespoons unsalted butter, at room temperature, divided
⅓ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
¼ cup whole milk
1½ cups all-purpose flour, divided
1 teaspoon baking powder
¼ teaspoon salt
1 cup blueberries
¼ cup packed light brown sugar
½ teaspoon ground cinnamon
FOR THE SAUSAGE PATTIES
½ pound ground pork
2 tablespoons maple syrup
½ teaspoon dried sage
½ teaspoon dried thyme
1½ teaspoons kosher salt
½ teaspoon crushed fennel seeds
½ teaspoon red pepper flakes (optional)
¼ teaspoon freshly ground black pepper
Directions:
To prep the coffee cake: In a large bowl, cream together 4 tablespoons of butter with the granulated sugar. Beat in the egg, vanilla, and milk. Stir in 1 cup of flour, along with the baking soda and salt, to form a thick batter.
Fold in the blueberries. In a second bowl, mix the remaining 2 tablespoons of butter, remaining ½ cup of flour, the brown sugar, and cinnamon to form a dry crumbly mixture.
To prep the sausage patties:
In a large bowl, mix the pork, maple syrup, sage, thyme, salt, fennel seeds, red pepper flakes (if using), and black pepper until just combined.
Divide the mixture into 6 equal patties about ½ inch thick. To cook the coffee cake and sausage patties: Spread the cake batter into the Zone 1 basket, top with the crumble mixture, and insert the basket in the unit.
Install a crisper plate in the Zone 2 basket, add the sausage patties in a single layer, and insert the basket in the unit.
Select Zone 1, select BAKE, set the temperature to 350°F, and set the time to 25 minutes. Select Zone 2, select AIR FRY, set the temperature to 375°F, and set the time to 12 minutes.
Select SMART FINISH. Press START/PAUSE to begin cooking. When the Zone 2 timer reads 6 minutes, press START/PAUSE.
Remove the basket and use silicone-tipped tongs to flip the sausage patties. Reinsert the basket and press START/PAUSE to resume cooking.
When cooking is complete, let the coffee cake cool for at least 5 minutes, then cut into 6 slices. Serve warm or at room temperature with the sausage patties.
